I recently went to Thailand for a holiday and there is the Pad Thai Noodles everywhere; My Hubby would have the Noodles with meat n i would have the meatless ones, which were good but i thought of making my own version of it!!
They use the Rice Vermicelli or the Rice Noodles both of which are available in most of our stores like Godrej Nature’s Basket wherein u ll also find a lot of other interesting stuff .
Pad thai Noodles is one of the Staple food of the Thai people which is available everywhere in the streets as well as the Casual dining!!
So here’s my Veggie version of it !
1 pack of Rice Vermicelli/ Noodles ( i love the Noodles)
1 carrot sliced
1 green pepper sliced
1 cup chopped spring onions ( or one onion)
2 tbsp celery chopped fine
2 tbsp chopped garlic ( can add more)
1 tsp ginger paste
2 tbsp soya sauce
2 tbsp ketchup
1 tsp red chilli powder
2 tsp oil
2 tbsp peanuts
1 tsp honey/ sugar
Salt to taste
To boil the Noodles;
Heat 6 cups of water in a pan , add salt n a tsp of oil; when it comes to a boil; add the Noodles n cook for just 3/ 4 minutes n quickly drain out the water n pour some cold water on it n add a little oil so that the Noodles don’t stick to each other !!
Preparation of the Pad Thai Noodles;
Heat the oil in a non stick pan ; add the garlic, celery,spring onions, green pepper, carrot n saute on a high flame for about 2 minutes, then add the peanuts, salt, sugar, chilli powder, soya sauce, ketchup n cook for a minute again
Lastly add the Noodles n mix well with a fork n cook on a high flame for just a minute!!
Garnish with some chilli oil, peanuts , fried garlic n spring onions ; i assure you that you ll make these Noodles over n over again as they are just Amazing!!
