Grilled Aubergine with Cauliflower Couscous 

I haven’t yet shared a recipe with Aubergine although it’s one of the most versatile veggie to work with!!

Although many people don’t really like it but they must try this unique n once again a Healthy recipe which combines aubergines n cauliflower in a very artistic way

This is a recipe which has very few calories n so u guys can relish it without any guilt!!

For the Cauliflower Couscous 

U need 

1 cauliflower cleaned n pulsed in a food processor or grated

1 tbsp olive oil/ butter 

Salt to taste 

For the Aubergine U need 

1 big Aubergine/ brinjal sliced 

Half cup maida/ All purpose flour 

Bread crumbs 

1 cup water 

Salt n pepper to taste 

Olive oil to grill

For the tomato sauce U need 

4/5 ripe tomatoes pureed n sieved 

2 tbsp garlic paste 

1 tsp chillipowder 

Salt to taste 

Pinch of sugar 

For the Couscous 

Heat oil/ butter in a non stick pan n add the cauliflower n salt n cover n cook for around 6 minutes on a medium flame, allow to cool

For the Aubergine 

Make a paste with the flour, salt, pepper n water.Dip the Aubergine slices in the paste, n sprinkle a little bread crumbs. Heat oil in a grill pan n grill the slices on both the sides till golden brown, keep aside

For the Tomato sauce 

Heat oil in a pan, add the garlic, then the tomato puree, salt, sugar n chilli powder n let it simmer for 7 minutes till it becomes a little thick n saucy

For the Sour cream

1 cup greek yoghurt/ hung curd

1 tbsp extra Virgin Olive oil 

Few drops of lemon juice 

Salt n pepper to taste 

Mix everything together n chill

Now take a round or oval plate n place the Aubergine slices on it, then add the tomato sauce then put the cauliflower couscous on it n finally add the sour cream 

Garnish with a few sprigs of parsley n serve 

This is a dish that combines so many cultures together n is a Culinary Delight so go ahead n try it n do give it some variations as that’s the actual Fun in Cooking!!
