One more of my most liked recipes by all big n small comes to u for Christmas; Chocolate Chip Cookies is a favourite of most of us n eggless ones are just so hard to find perfect, i have tried it several times and turns out really good!!!
I have used dark chocolate chips, u can use even milk chocolate chips or also chocolate chunks, even that tastes awesome
These really turn out so moist n chewy that u ll be amazed!
1 cup butter room temperature
3/4 cup granulated white sugar
3/4 cup brown sugar ( demerara)
21/4 cup All purpose flour/ maida
1/2 tsp baking soda
1 tsp baking powder
2 tbsp yoghurt/ thick curd
1 to 2 tsp milk
2 tsp vanilla extract
1 1/2 cups of dark chocolate chips (can also use 1 cup chips n half cup of walnuts or almonds)
Preheat the oven to 200deg centigrade
Mix together the flour, baking soda, baking powder n sieve
In a large bowl, firstly beat the butter with a hand mixer until creamy n then add both the sugars n beat well
Then add the vanilla extract n beat , add the yoghurt/curd & milk beat well
Now add the flour mixture little by little n beat until well incorporated, do not overbeat, the batter should be stiff n soft, not runny
Lastly add the chocolate chips n mix in the batter with a spatula or can even use your hands to mix it lightly
Take a parchment paper lined oven tray n drop a spoon( u can even use a 1/4 measuring cup if u want bigger cookies) of the batter on it till all the batter is over, u ll need 2 trays as u cannot fit all in one tray as it ll spread, i generally use the 1 tbsp spoon as it gives the correct shape n size to all the cookies
Bake in the preheated oven for 10 to 15 min until the edges are lightly browned n Not More or they ll be too hard
Leave them on the tray to cool n remove n place them in an airtight container, if possible wrap them in a cling so that they will retain their texture but u won’t need to as most of them will be gobbled up by the time they are out of the oven!!!
